Heat the oil in a large saucepan and gently fry the onions for 6–8 minutes until softened. Add the garlic and cook for 30 seconds, then add the roasted red peppers, tomatoes, chickpeas and stock.
Season with salt and pepper and cook for 20 minutes over a medium–high heat until rich and thickened. Add the spinach and allow to wilt, then stir in most of the coriander leaves and chermoula.
Serve with an extra drizzle of chermoula paste and a sprinkling of coriander.
